Our fig tree really loves this Mediterranean-like weather we have at the moment. There are lots of fruits and I find them sweeter and tastier than previous years. Tonight we had a salad with grilled figs, prosciutto crudo, walnuts and grilled bread with chèvre.

On a warm summer day like today there is nothing better than a cold soup. This one is a bit inspired by a gazpacho made with veggies from the garden: cucumber, zucchini, apple, tomatoes, garlic mixed in the blender with cold vegetable broth and at the end frozen peas for a smooth texture and some sweetness. Then topped with cucumber, fresh peas and thinly sliced jalapeño. Super fresh!

I can now confirm that homegrown aubergine tastes much more than the ones from the supermarket. We grilled the aubergine and then topped with labneh balls, zaatar, olive oil and small grapes from the garden. Amazingly delicious!

Finally our first tomatoes are ready to eat! Tonight we went all in for tomatoes. First a colourful insalata caprese with mozzarella di bufala, topped with Spanish chervil, fennel dill, oxalis and herb oil. It was as good tasting as looking!

Now is the time when the Meadowsweet is blossoming here in the northern part of Sweden. It grows almost everywhere, often in damp areas and we have a lot of it growing on a meadow close to our summer cottage. This plant has long history as a medicinal herb, used as pain relief and against inflammation. The taste of the flowers reminds of cherry and almond, and this is the first time I try to make a cordial of it so I’m really excited to taste it.
