homemade zucchini noodles tossed in a divine sauce and served with fried zucchini and halloumi.

I had a huge zucchini that has been staring at me in the fridge, urging me to do something good. So I decided to make some zucchini noodles, zoodles, on my spiralizer.

I also cut the zucchini and halloumi in cubes, to deep-fry and use as a topping.

I later tossed the zoodles with a divine nutty, spicy sauce. I often make variations of this sauce and use it for all kinds of noodles, warm or cold, thick or thin. I can really recommend it, it’s super tasty!

Then top everything with some roughly chopped peanuts, coriander and spring onions. Smaklig måltid!
