Zucchini and halloumi fritters

This is one of my favourite zucchini dishes. It’s possible to do endless variations of zucchini fritters but the combo of zucchini and halloumi is really amazing.

Adding some potatoes makes them more crispy when cooked. And of course the taste becomes even better when all veggies comes straight from the garden.

I usually cut the zucchini “julienne style” on the mandoline slicer, I think it gives a better texture and more crispy fritters. But if you don’t have a mandoline slicer, it’s also works fine to grate it.

Serve with a salad and a nice dip sauce!
