no waste asparagus soup

we eat asparagus almost every day now.

And they grow so quickly that it’s sometimes difficult for me to have time to harvest them before they grow too big and get woody. In most of the dishes you only want to use the nice part of the asparagus. I often save the “ugly ends” in a container in the fridge and they sit there waiting to become a soup.

And I really recommend you asparagus lovers out there to do the same! Don’t throw away those woody ends, for good’s sake! There is still lots of flavour in them. Make a soup, blend it and pass through a sieve to get rid of the fibres.
