green GAZPACHO

On a warm summer day like today there is nothing better than a cold soup. This one is a bit inspired by a gazpacho made with veggies from the garden: cucumber, zucchini, apple, tomatoes, garlic mixed in the blender with cold vegetable broth and at the end frozen peas for a smooth texture and some sweetness. Then topped with cucumber, fresh peas and thinly sliced jalapeño. Super fresh!

no waste asparagus soup

We eat asparagus almost every day now. And they grow so quickly that it’s sometimes difficult for me to have time to harvest them before they grow too big and get woody. In most of the dishes you only want to use the nice part of the asparagus. I often save the “ugly ends” in a container in the fridge and they sit there waiting to become a soup.
