today is the international day of awareness of food loss and waste

Today is a really, really important day with a very long and not so catchy name. It’s an initiative by FAO and UN. It also comes during the global COVID-19 pandemic, that has brought about a global wake-up on the need to transform and rebalance the way our food is produced and consumed.

Food is wasted in all steps of the chain: at the producer, in the supermarket and in the homes of us consumers. We can all improve in reducing waste and here is one of my favourite pimped leftovers: Arancini!

Arancini is fried balls of risotto. It’s super easy to do and tasty!
