melanzane alla parmigiana deconstructed
A version of the classic Italian dish, but without first making a tomato sauce and frying the aubergine. This is my lazy way of making melanzane alla parmigiana, but I must say it’s still super good!

Grilled aubergines with a sauce made of labneh, tahini and lemon juice and topped with za’atar and olive oil. I love the middle eastern flavours!

I can now confirm that homegrown aubergine tastes much more than the ones from the supermarket. We grilled the aubergine and then topped with labneh balls, zaatar, olive oil and small grapes from the garden. Amazingly delicious!
