Grilled aubergines with middle eastern flavours

From garden to table in a few minutes! It’s a really wonderful thing to be able to go out in the garden to harvest just before you start cooking. These lovely aubergines were cooked on the grill.

First cut it in half and make a cross pattern in the cut side. Place on the grill, cut-side down for a few minutes. Then flip over and brush them with a generous amount of olive oil every now and then until they are soft and ready to eat.

Then I mixed labneh, tahini and lemon juice with a dash of water and spread on top of the aubergines and topped with za’atar and olive oil. It turned out really delicious!
