CHANTERELLES, fresh sweet corn and chicken pie

a lovely savoury pie with a creamy filling.

Maybe needless to say, but this is really a magical combination. I love fresh sweet corn and we are now at the end of the season here in Sweden. I tried to grow some in my garden this year, but the result was not very good. So I bought these ones from a local farmer.

The chanterelles I found in my freezer, but it’s still possible to find fresh ones. I always try to use fresh ones when in season, but I couldn’t find any nice ones. And we never had any luck finding them here in Skåne, but I guess we need to become better at searching.
