Asparagus, asparagus & asparagus
This time of the year we eat asparagus in all forms, and ways. And I don’t complain. It’s my favourite vegetable in our garden, and it keeps coming back year after year.
Today I made this amazing pasta, inspired by Rataná. It is really delicious! It has asparagus prepared in three ways: puréed, fried and raw.
We often do a frittata with asparagus, perfect for a quick lunch. This one was topped with brown butter hollandaise (!!!) and sunflower sprouts. Yummy!
